Program Description

Our Retail Butchery program is designed to give you the hands-on training needed to prepare, process, and sell meat products in a retail setting. Upon completion, students will be equipped to work as a retail butcher, providing customers with high-quality meat products and excellent customer service.

Under the guidance of our seasoned butchery experts will guide you step-by-step through the cutting and preparation techniques to become successful butchers in professional butchery labs. You will also learn about the history of butchery and learn how to get the finest cuts from beef, veal, pork, lamb and chicken.

Beyond the classroom, we help you transition into a career through our placement program which provides you work experience in a real-world setting.

Butchers can be found working everywhere from your local deli to high-end restaurants where they act as artisans, whose cuts of meat highlight both taste and presentation for a refined clientele.

PACC offers an option where students are paid while taking the retail butchery program. This new collaboration with the Quebec government has students spending 40% of their studies in industry.

The public has the opportunity to purchase our fresh-cut meats at our Lasalle boutique.
